The Tomato Extract, in Sicilian dialect named 'strattu' o 'astrattu', represents from ancient times one of the most common methods to preserve tomatoes for winter use. The traditional preparation of the tomato extract starts by putting the pulp from fresh tomatoes in the sun on wood tables on the balcony or on a terrace for few days. The strong smell of tomatoes which characterised the streets of many Sicilian villages in summer was due to this production technique.

Using tips: The Tomato Extract is usually added to the tomato sauce or to meat sauce to exalt its taste and texture. It represents a fundamental ingredient of 'pasta cu sucu', the typical Sicilian Sunday meal based on a very rich meat sauce made with veal meat, pork meat, sausages and potatoes.
