Spaghetti with Aged Cheese with Black Pepper





Introduction

A very fast and simple recipe, still unique thanks to the exceptional flavour of our Sicilian Sheep's milk Aged Cheese. A Sicilian version of the well known 'Cacio and Pepe' from Lazio region.


Ingredients

400 gr of spaghetti; 100 gr of Sicilian aged sheep's milk cheese with black pepper; salt.


Preparation

Grate the cheese by using a grater with big holes and put it in a bowl.
Cook pasta in slightly salted water and, a couple of minutes before draining it, add a spooful of cooking water to the grated cheese. Mix to obtain an homogeneous mixture. Drain the spaghetti and add the dressing sauce.
Mix carefully and serve immediately.

Wine pairings: a Sicilian red wine, as a Nerello Mascalese.
