Olive Sant'Agata





Introduction

These olive-like sweets, made with almond paste and sugar, are prepared on the feast of Saint Agatha. 
What are their origins? It is said that St Agatha was fleeing from Quinziano's soldiers, while tying her shoes she saw an olive tree, hid behind it and ate its fruit! 


Ingredients

- 500 g almond flour - 500 g caster sugar - 1/2 glass of water - 2 tablespoons sweet liqueur - 2 tablespoons green colouring


Preparation

Pour the almond flour into a pan and add the sugar and colouring agent. Gradually add the water to the mixture and knead until the mixture is soft. Cook over a low flame for 15 minutes, stirring continuously, and finally add the liqueur.
When the mixture has become warm, break off small pieces of dough and shape each one into an olive. Sprinkle the Sant'Agata olives on some caster sugar and leave them to dry for 3-4 hours before serving.
