Sword Fish rolls in the oven





Introduction

'NVOLTINI I PISCI SPATA' The Sword Fish Rolls represent a very typical fish recipe in Sicily. An appetizing and new way to cook this type of fish, which is very abundant in the seas surrounding Sicily.
You can find several versions of this recipe, that combine sword fish with different local ingredients, as pecorino (sheep's milk) cheese, anchiovies, capers and tomatoes.
We will now introduce to you a simple recipe of Sword Fish rolls in the oven.


Ingredients

12 thin slices of sword fish; 150 g of bread crumbs; 2 spoons of pine nuts; 2 spoons of raisin; 2 spoons of grated pecorino (sheep's milk) cheese; a small bunch of parsley; 2 anchiovies in salt; 2 lemons; few bay leaves; extra virgin olive oil; salt and pepper.


Preparation

Gently toast 100 g of bread crumbs in a pan with two spoons of oil and mix with pecorino (sheep's milk) cheese, ground parsley, pine nuts, raisin and anchiovies (previously desalinated, boned and melted in some oil, a couple of spoons of lemon juice, a pinch of salt and pepper.
Sprinkle some salt over the sword fish slices and covered them with the preparation. Roll them, dunk them in oil and than in the bread crumbs.
Arrange them in the wooden spits, alternating with the bay leaves and place in an oven dish. Sprinkle a mix of oil and lemon over them and put in the oven at 200° for 20 minutes.
