Spaghetti with fried Zucchini





Introduction

'SPAGHETTI CHI ZUCCHINI FRIUTI' The Spaghetti with Fried Zucchini are a Sicilian recipe, easy to make but very tasty. Mainly cooked during Summer and at the beginning of Autumn, when it is still possible to find sweet and tender zucchini, just picked up.


Ingredients

400 g of spaghetti; 2 green zucchini for frying; 1 glass of extra vergin olive oil; grated pecorino (sheep's milk) cheese or grated salted ricotta cheese; a clove of garlic; salt.


Preparation

Wash and blunt zucchini; cut them in slices and sprinkle salt on them. Slightly fry the squashed garlic, in a pan with a bit of oil, until it gets golden colour. Drain them, keeping them warm but keep the oil apart.
Cook pasta in salted water, drain it 'al dente' and dress it with the oil, previously put aside. Add the zucchini, mix, and sprinkle grated pecorino (sheep's milk) cheese or salted ricotta on it.
