'RISU CACOCCIULI E PUSEDDA' The Creamy Rice with Artichokes and Peas is a light and nourishing vegetarian meal, that can be enriched, to your taste, with a sprinkle of grated caciocavallo cheese. Enjoy!
400 g of rice, 300 g of shelled peas (preferably fresh), 4 artichokes, 1 lemon, 1/2 onion, a small bunch of parsley, 4 spoons of extra vergin olive oil, 50 g of grated caciocavallo cheese, salt and pepper.
Clean the artichokes, removing the external leaves and the choke, if present; remove the ends, cut the hearts in small slices and place them in a bowl with water and lemon juice.
Brown the ground onion in oil in a bowl; add the peas and mix slowly; add the artichokes and the ground parsley and sear for a couple of minutes.
Pour half cup of warm water and cook for 15 minutes, over a medium flame.
Add the rice, add salt and pepper and cook by slowly adding 1,3 litre of warm water.
When ready the preparation should be quite creamy.
Add a sprinkle of grated caciocavallo cheese, if you like.
