SPAGHETTI WITH TUNA EGGS Sicilian fine pasta recipe for those who love fish based dishes. Very easy to make by using our Fish Eggs preserve; you can also replace the tuna eggs with the Mullet fish eggs.
400 g f spaghetti; 50 g of tuna eggs; a small bunch of parsley; extra vergin olive oil; salt.
If you are using whole fish eggs, grate them and keep them aside.
Warm up a glass of oil (better if bain-marie); add a spoon of tuna eggs and a bit of ground parsley; let it rest for 15 minutes. Cook spaghetti in salted boiling water and drain 'al dente'.
Dress with the oil sauce just prepared and sprinkle over it the rest of fish eggs and a handful of ground parsley.
