Introduction

'BRIOSCIA CU TUPPU' The Famous Brioche with 'Tuppo' (a bun on top), is to be tasted warm, mainly for breakfast, to dip into a delicious granita or filled with ice cream. It is without any doubt one of the most typical symbols of Sicily. You will find the original brioche with 'tuppo' only in coffee places and pastry shops within the region, mainly on the Eastern coast and surroundings.

This soft brioche is named 'with Tuppo' because of the small ball on top of it, that reminds of the chignon that Sicilian women used to often have on, which is called 'tuppo' in Sicilian dialect.


Ingredients

500 g of white fleur; 20 g of brewer's yeast; 100 g of margarine; 4 eggs; 100 g of caster sugar; 1 bag of saffron (optional); half cup of milk; 2 spoons of fresh single cream; butter; salt.
