Introduction

‘CACOCCIULI CA MUDDICA’ The artichokes, named ‘cacocciuli’ in Sicilian dialect, are very much used and appreciated in the Sicilian cuisine, which offers numerous ways of cooking them. We now propose a artichoke recipe, which is simple but tasty and nutritious at the same time; excellent for a vegetarian dinner or as an original side dish.


Ingredients

8 artichokes; 2 garlic cloves; a bit of parsley; 100 gr of stale bread guts; 150 gr of aged pecorino (sheep's milk) cheese; extra virgin olive oil, salt and pepper.


Preparation

Remove from the artichokes the hardest external leaves and open up the remaining ones. If you do not manage to open the leaves, lightly beat the upper part of the artichoke against a plane surface (as the working plan) to make it softer. Wash the artichokes and drain them.
Grate the stale bread guts, season it with ground garlic, pecorino cheese (previously chopped up or grated), parsley, pepper and a bit of salt. Fill in the artichoke with this mixture.
Place the artichokes in a pan, sprinkle with extra virgin olive oil, put the cover and cook for a couple of minutes and then add a glass of water. Continue cooking for approximately half an hour.
