Chocolate Salami

Introduction

‘SALAME TURCO’ The Turkish Salami, also known as Chocolate Salami, is a delicious dessert made with chocolate and biscuits, very simple to make. We suggest you keeping in the freezer, in order to have an already made dessert for yourself and for your guests.
The name ‘Turkish’ does not refer to its origins, but to its colour, which recalls the Moors’ skin colour.

Ingredients

3 eggs; 250 gr of sugar; 250 gr of dry biscuits; 150 gr of butter; 50 gr of unsweetened cocoa powder; 1 vanilla bag; 2 spoons of marsala wine.

Preparation

Melt the butter and chop up the dry biscuits in a bowl. You may use the mixer, but please pay attention not to make the biscuits crumble too much.
Separate the egg whites from the egg yolks and beat the whites until stiff. Add the egg yolks, the sugar, the unsweetened cocoa powder and the melted butter and blend it accurately.  Add the biscuits, vanilla and two spoons of Marsala wine.

It is also possible to add ground toasted almonds.

At this point, transfer  the mixture on a piece of aluminium foil and roll it up giving it the shape of a salami. With the indicated doses you will be able to create 3 or 4 small salamis.
If you have enough time, we suggest you storing the salami in a dry and cool place for approximately a day and then put it in the fridge for a couple of hours before serving.
Remove the aluminium foil and slice the salami before serving.

In order to store the dessert for a longer time we suggest you keeping it in the freezer, remembering to take it out of the freezer half an hour before serving.

Wine pairings: Moscato di Noto DOC
