The production of Sant'Angelo Salami P.G.I. (Protected Geographical Origin) starts at the end of the century XI in Sant'Angelo di Brolo (Messina Province). The production techniques improve but the traditional high quality and meticulousness in the preparation are maintained. The pigs used to prepare this salami are bred in S. Angelo di Brolo following a detailed manual that ensures that the best quality meat is used and then mixed with pork fat, salt and pepper. The salami is than made into sausage using natural intestinal lining.

Taste, Serving Tips and Wines: The Sant' Angelo Salami is characterised by a bright red colour when cut, a delicate taste and a lightly spicy and fragrant aroma. It is very good as a starter and excellent together with local bread and full bodied wines. Excellent when combined with red wines from Etna.
