The Young Cheese black pepper 'Primo Sale' is a young lightly salted cheese, produced with ewe milk.  This cheese has been salted only once, hence the name 'Primo Sale'.

Taste, Serving tips and Wines: This cheese has a delicate taste enriched with the flavour of black pepper and is very good to enrich a starter dish or in general as a table dish. Good next to a glass of Sicilian white or wine, with low or mid alcohol presence.

Preparation:Its manufacturing consists of heating raw milk up to coagulation temperature by adding curd. After coagulation, curds are fragmented and everything is cooked with water or hot whey. After all, the curds drain off for 1-3 days, accordingly with weight. Appearance: Rind: rough, segmented Colour: eggshell white with black pepper Texture: firm
