UVE Malbec TERRITORY OF ORIGIN Gazzerotta estate, Mazara del Vallo - Province of Trapani   TERROIR Soil: characterised by a clayey, mixed sandy matrix, rich in minerals and with excellent water retention. Altitude: 20m above sea level. Climate: area subject to water stress due to its distance from the sea. This condition is mitigated by the natural water retention of the soil.   VINIFICATION AND REFINEMENT Harvest from the second ten days of September. Long maceration at controlled temperature until completion of alcoholic fermentation. Maturation for 6 months in steel tanks. Static clarification with subsequent bottling without any fi ltration, to bring out the best of the gustative-olfactory characteristics.   TASTING Colour: lively red. Bouquet: clear notes of red fruits and violets combine with pleasant balsamic and spicy hints. Taste: very smooth, well structured, balanced and persistent, characterised by a pleasant freshness. PAIRINGS To be enjoyed with mushroom and truffle risotto or roast pork, it is also surprising in informal situations, accompanied by platters of mature cheeses. Serve at 18°-19°C.   ALCOHOL 13.5% vol. FORMAT 75 c
